Dewey, I agree, about 1 pound of filets per person.

Of course you know your audience best. If they are big guys, you may need to up it. If there are more women and kids than big men, maybe cut back. I always prefer to have a little left over than not enough fish for everyone.

I have done 2 of these with over 100 people and I it took 6 FULL bags of meat to cover everyone. I always to to do the pound per person thing, but then I never know how much is in the bag when I freeze it. By the time I am ready to cook it, I can thaw and then weight it, but it is toolate unless I have way too much fish. Normally only keep them when a fish fry is on the way. Takes us about 3 trips to fuflifll the request when it is not in the summer time icon_biggrin.gif

Do any of you weigh it before you bag it? I am gonna try this next time or at least get an average of a full gallon ziploc bag.

Try labeling it with the number of fillets in each bag.. that'll give ya an idea of how much you got in there...

Lawdy a pound of fish per person is a BUNCH!!!!!! We usually cut the fish into 2 oz pieces so they fry up quicker. For a mixed bunch of men, wimmen & chillens we use 6 pieces each and have never run out. We used this same formuli at the Lavon gathering with purty much all men and didn't run out.

Fish ain't near as dense as beef! 8 oz of fish will be quite a bit more volume than 8 oz of beef. For 20 folks, 12.5 pounds of fish should be mucho plenty.

Joe, we do fish fry's for our church also. 150 to 200 folks. Best way I have found to package the fish is in quart ziploc freezer bags. I usually put 20-25 pieces in a bag and then do the math for how ever many mouths we gonna feed.

I used to use the gallon bags but it just takes too long to thaw them rascals out. The quart bags thaw much faster.

Mr. P-

I cook mine the same way, just freeze the filets whole then cut em up before I cook em. For me, my wife and daughter I'll put 5 filets in a bag and freeze em. As I still haven't broken down and bought a vacuum sealer I use 1 gal bags, 5 filets, half a lemon squeezed, and fill the bag 1/2 with water. Get all the air out and freeze em. Just the way my grandma always did it and they never freezer burn. I can thaw this block in maybe 20 min by taking it outta the bag, place in a collinder and barely run a lil cold water on it till thawed. I only keep 1-5 lb fish when I'm out, then I'll keep maybe 25 fish to stock up. These size fish I'll eat maybe 3 filets with all the fixins and my wife & daughter usually eat one.

JohnnyD, I have never heard of freezing with a squeezed lemon. Does this help protect against freezer burn? If not, what does it do? Thanks.

To tell ya the truth just the way my Grandma always did it but I like lemon on em any way and it makes it smell PURTY icon_wink.gif
