The deer are flat out avoiding us so far this year. My brother did manage to take this boar Sunday morning. I had a pretty rare occurrence though. I shot 3 coyotes and missed a 4th with my bow Sunday morning. The first one at 33 yards and the other two at 18. Then I missed a chip shot at 25 yards. I guess 3 out of 4 isn't that bad. I saw 7 coyotes total that morning. After all of the excitement the work started when we checked the hog trap and found 11 in there from 30 lbs up to 125 lbs. Needless to say we'll be making lots of sausage.

| way to go on the hog. Coyotes and hogs look like they are givin you good warm-ups for when the deer slip up. Nice haul.

We make our own sausage and process our own game. I'm holding a tub of jalapeno and cheese summer sausage with a spread of "Klobase" (Czech for smoked sausage) on the table. It's part of my heritage and passed down from generation to generation. We have a comercial grade grinder and stuffer for the big jobs. And I'll use a small hand grinder for small batches. Here's a shot of me and Abby making some wild pork breakfast sausage last season. It's a lot of work, but a lot of fun at the same time.

Yeppers, I make all my sausage too! I make a cheesy jap Kielbasa and smoked kielbasa that is purty good. Finally found a place to get the hi temp craft cheese. It doesn't melt so easily when smoking the sausage.
Whut kind of pit do you use to smoke the sausage on?

I have a small electric smoker that I use for the summer sausage. We had a custom made smoke house. I was a big water cistern with a custom broom handle rack inside and a below ground fire pit on the back side. We used it for the smoked sausage. It was kind of redneck but got the job done for many years. Dad cleaned up around their house and sold our smoke house for scrap metal. Not quite sure what we're going to do this year. I may need to get the details from you on the cheese. We used grated cheddar the last couple of times. It did melt, but gave the sausage some much needed moisture when we didn't have enough fat in the mix. _________________ Bobby Kubin

dang that sounds like some good fix'n.
I do all my stuff except for the grinding. got a place that will do it in bulk for .50 per pound then I take it over from there. I only do the breakfast sausage in 50lb batches with a 50/50 deer hog mix though. Never tried the summer or link sausage on my own.
Mr.P, I have 3 hog traps baited out and will be set on the 17th to the 20th. If you want some pig let me know.

I dont know about where your hunting but in burnet county the
acorns are starting to drop, I hunted the last three days and
did not see a deer. I hope the acorns dont last long.

| You guys ever put out oat bran? I was amazed at how deer love that stuff. They come up with it all over their nose. Its so funny to watch. I have seen a super cautious deer just disregard everything once he gets his nose in that stuff.

We hunt near Trinity and got hit by the hurricane last month. Most of our acorns were blown off of the trees. Our hunting is usually better when we have a good acorn crop. The deer seem to concentrate on the oaks and less on the browse.
We've never tried oat bran before. How much and where can you get it? We do use rice bran and Buck Grub in our pipe feeders. The price of corn has gottne way too expensive.
I thought about making some snack sticks (slim jims) this year. Has anyone else tried this, have a good recipe or know of a good seasoning mix or kit to buy? _________________ Bobby Kubin

| You can get oat bran at the feed store. Its about $15 for a 40 or 50 pound sack. Try putting some out. Youll be amazed.
