Take 6 Sand bass fillets.
soak these in 1 at club soda and 1T zatarins crab boil.
Soak 4 hours.
Mix 1Qt water with 1/4 C zatarins (dry) crab boil, and 1/2 onion cubed (flavor only).
Bring to a boil
Cut sand bass fillets in strips 2" long and 1/2" wide.
Fold the fillets and stick a toothpick through it to hold. (kind of wind it on the toothpick).
Boil toothpicked fillets for 3 minutes.
Dump into culander to remove water. Pick out fillets on toothpicks and put in refrigerator to chill for a couple hours. They need to be deeply chilled.
Serve with red cocktail sauce.
